Tomato, Bacon, and Onion soup




HOLY SMOKES!! this soup is the BEST tomato soup i have EVER HAD!! BLT's are one of my favorite sandwiches so i thought why not make a soup-!! My Brothers cheeseburger soup gave me the idea. I would SO serve this for company.


Fry 12 oz of bacon and set aside. In the bacon grease cook a med white onion chopped until translucent.

in a large pot add the following:

cooked onion
28 oz can of diced tomato
6 oz can tomato paste
8 oz can tomato sauce

2 1/2 cups of chicken stock with 2 tbl of flour mixed in

1 tsp of sugar
1 tsp  thyme
1 tsp basil
1 tsp oregano
2 beef bouillon cubes
1 bay leaf
salt and pepper to taste/
1 glove garlic crushed.

bring to a boil and then turn the heat to low- at this point i thought it was too tart, so i sprinkled about 1/2 tsp of baking soda in, stirred and then removed the foam.

next:

add 3/4 cup of half and half or you could use cream.

I did taste as i went along, i know i added more sugar, and a little more chicken stock.

Basically simmer for 10 minutes. add crumbled bacon at the end,  right before serving. Perfect side tonight grilled cheese sandwiches YUM

Top with green onion, shredded lettuce, fresh diced tomato, shredded cheese, sour cream- whatever you want!
